HOW TO BALANCE A TRAY?

OBJECTIVE

To ensure that all F&B team know the standards.


POLICY

To maximize guests satisfaction.

It is the policy of the hotel that all F&B team follow the same standard.


PROCEDURE

Pick up tray

Right hand

Natural manipulation of the fingers

Carry tray

Left hand

Balance tray

Spread fingers as wide as possible without any strain and discomfort.

Place center of tray on palm of left hand.

Pick up items to place on tray

Heavy items in the center.

First item to be place in the center for stability.

Taller items to be placed on the outer edge of tray at position 6 to 9 o/clock

Always maximize space by grouping items where possible.

Eg: All cutlery on a portion of tray.

Comfortably away from body for balance.

Move towards table

Close to body to reduce load and for safety

Serve items

Right leg close to guest’s right

Left leg slightly apart to rear

Ensure you are comfortably stable

Right hand

Away from guest.

Comfortably away from body for balance

Place back tray

Designated places

Eg: Side stations

Pick up section of the bar

Back area
