


HOW TO CLEAN THE MENU?
OBJECTIVE
That the menu presented will be clean and complete with all appropriate menu lists.
POLICY
To ensure the guests has a pleasant all round dining experience.
PROCEDURE
Arrange menu
At the end of the service period collect all menus and pile in a suitable space with enough room.
Organize cloth and soapy water
Get a clean suitable clothe and a small bucket of hot soapy water.
Be sure not to use any solvents such as spray & wipe.
Soak the cloth in the water in preparation for cleaning the menus.
Wipe the menus thoroughly
Take the cloth from the water and ring the cloth out thoroughly so that it is only damp.
Holding the menu firmly wipes the front and back of the cover, open the menu and wipe the inside cover.
Repeat
Be sure to clean thoroughly all menus, wine lists and bill folds. This is essential for the up keep of such items.
General
Be sure not to stain or mark the pages of the menu when cleaning the covers. Any marked menus should be replaced.
The water should be changed regularly so to keep it clean and hot, the same applies to the cloth being used.
