


HOW TO CRUMB THE TABLE?
OBJECTIVE
The table top should be refreshed by crumbing and well arrangement.
POLICY
Showing that we are taking good care, high standard of serving food and beverage.
To allow the sequence of service run smoothly and without delay
PROCEDURE
Prepare the equipment to crumb the table
A small crumb brush/crumb spatula
A side plate
Both should be clean
Table clearance
When every guest have finished their main course, you must start clearing all the soiled equipment except the flower vase, glass, ashtray, toothpick, if the place-mate was soiled you also need to change another one.
Crumb down the table
Approaching to the table and say:” excuse me Mr./Ms. xxx please give me a few minutes to crumb your table.”
Hole the brusher in one hand, crumb should be brushed (not flicked)discretely off the cloth onto the side plate
The side plate was held in another hand and just under the rim of the table
This operation should be quick and not accentuate a messy cover.
Thanks the guest and leave the table
Dressing the cover
If there is set menu or dessert cutlery was set up, the dressing the table need to element:
At the right of a guest, bring down the spoon to the right vertical lay-up position of the cover
At the left of a guest, bring down the fork correspondingly.
