


HOW TO DECANT A BOTTLE OF WINE?
OBJECTIVE
That separate the wine from any sediment deposited during the ageing process, allow the wine to breath in order to enhance its flavor..

To maximize the guest satisfaction
Drinking wine is an experience – it is exactly for this reason that we need to ensure that all the correct steps are followed to enhance our guests drinking pleasure.
To allow the standard operating procedure to run smoothly and without delay.
PROCEDURE
Offer to decant the wine
After guest order the old vintage preserved red wine, you should inform guest that decant the wine need to be element saying: “Mr./Ms. Xxx please wait a moment, the wine will be decanted and served to you within 5 minutes"
Select the3 equipment
A waiter cloth
Cork screw
Decanter
Filter
All equipment is clean and in good condition
Open the bottle of wine
How to open a bottle of wine; refer to SOP GEN-0023.
After presenting wine to the guest, wine can be opened and decanted at the nearest side station
Decant a bottle of wine
Place the filter on the neck of the decanter.
Your left hand keep the filter for balance.
Pick up the wine bottle in your right .
Slowly and carefully pour the wine into the filter until the bottle is empty(keep 2cl at the end in the bottle to avoid many sediments)
Serving wine from decanter
Place the wine cloth your left hand
With the decanter in your right hand and offer the host to taste the wine
Slowly pour the wine into glass
Wipe the lip of decanter with wine cloth.
Follow the sequence of serving wine for the rest of table.
Place the decanter on the table
When every guest has been served, the wine decanter should be placed on the table, right hand side of the host.
Follow up to top up when the glass early empty.
