HOW TO HANDLE GLASSWARE INTO TRAY?
OBJECTIVE
To ensure that all F&B team know the standards.
POLICY
To maximize guests satisfaction
It is the policy of the hotel that all F&B team follow the same standard.
PROCEDURE
Personal hygiene
Clean and dry hand
Pick up tray
Tray is dry and clean
Hold tray in left hand
Tray is balanced
Pick up glass
Hold lower portion of stem
Hold lower portion of glass, near the base
Hygiene purpose (for clean or soiled glasses)
Never pick glasses in bouquets or bunches
Never stack glasses on top of each other
Never put cutlery into glasses
Transfer into tray
Maintaining balance
Move to destination
By brisk walking
