


HOW TO PRESENT, OPEN AND SERVE A BOTTLE SPARKLING WINE ?
OBJECTIVE
That wine is topped up once the glass is half full with care and by friendly service team with a smile.
POLICY
To maximize the guest satisfaction.
To ensure the wine brought to the table is the one chosen by the guest.
To ensure the guest has the opportunity to taste the wine prior to serving our guests.
PROCEDURE
Prepare a bottle of sparkling wine
Double check the wine label and vintage against the POS printed order.
Obtain the bottle of sparkling wine and put it in the wine bucket, fill ice cubes in the bucket until to the rim and add cold water.
Put napkin over the wine cooler from right to left, overhanging on the sides.
Present wine to the guest
Present the bottle in a horizontal position & it’s label uppermost with a service cloth supporting the base of the bottle to the guest & say.
“(Guest name) Sir/Madam this is the ordered sparkling wine, may I open it now?”
Open the sparkling wine
Remove the foil & place in your pocket. Lift the sparkling wine cork’s toggle with your right hand, twist anti-clockwise, holding the cork with your left hand’s thumb.
Keep your thumb on the cork until the sparkling wine is completely twisted open. Twist the cork slowly with your right hand.
Remove the cork
Applied strength to the thumb to prevent the cork from shooting up when you feel the cork is beginning to rise.
NOTE: No ‘pop’ sound let the cork slowly come up from the bottle while keeping the cork firm in your hand.
Place the cork upwards on the guests table besides the wine glass.
Ready to serve
Wipe the bottle’s mouth inside out with the service cloth.
With the label facing the guest, pour the sparkling wine consisting of a mouthful for the guest to taste.
With the label facing the guest, pour the sparkling wine consisting of a mouth full quantity for the guest to taste.
Pouring/serving the wine
After the guest has tasted the wine, serving should be done clockwise.
Pour 2/3 of sparkling wine into the glass. Once finished place the bottle in the wine cooler on the table.
