


HOW TO SERVE COMPLIMENTARY PRAWN CRACKERS?
OBJECTIVE
To ensure that all F&B team know the standards. That the crackers are served in a timely and professional manner by knowledgeable, approachable and friendly staff and that is will be accompanied by all appropriate condiments
POLICY
To maximize guests satisfaction
It is the policy of the hotel that all F&B team follow the same standard. To complete a full dining experience and increase guests satisfaction
To allow the SOS to run smoothly and without delay
PROCEDURE
Check personal hygiene
Hands are clean and dry
Prepare the crackers
After taking the food order move to the kitchen station, request and prepare the crackers & dip sauce for the table.
Allow 2 pieces of prawn crackers for each person
Organize the crackers attractively into a plate and carry both sauces with a ramekin to the table.
Approach the table
Speak to the guests and offer “ excuse yourself, here is your prawn crackers and dip sauce”
Leave the guest
Once the prawn crackers has been served with sauce, leave the table and say to the guest, “Enjoy your crackers sir, maam”
Be aware of any other needs the guest may have whilst at the table, take note of drink levels and ask specifically if anything else is needed.
Pick up prawn crackers and sauce
Upon arrival of guest at the table
From the kitchen station
2 pcs of prawn crackers portion per guest
Use beverage trays for table of 6 and below when serving
Use food tray for tables of 6 and above when serving
Approach table to serve
Without unnecessary interruptions
Without fanfare as it is not the main focus of meal
Place Prawn crackers stand onto table
Upper most portion of stand with right hand
It is the most unstable of the items we are serving
Next to the salt and pepper shaker
Ensure all at table have easy access.
Place sauce dish on table
Above the side plate
Handle only the edge and base of the sauce dish
Do not touch the sauce
Leave table
As unobtrusively as when we approach table
