HOW TO SERVE PLATED FOOD?

OBJECTIVE

Expect to see all associates have obviously been shown, tasted & fully understand each dish on the menu & the specials that are created daily.

To maximize the guest satisfaction

To be professional in the delivery of personalized service at all levels of interaction


PROCEDURE

Picking up plate up

When picking plates up check to make sure there are not chips or cracks on the plate.

If the plates are hot then use a cloth to carry the plate.

Before picking the plates up make sure there is a clear pathway.

Only carry what you are comfortable with carrying.

Approach the table

Stand by the right side of the guest with right leg slightly in front of the table.

Serving plated food

Say “Excuse me, Mr/Mrs/Ms Guest name) Sir/ Madam, this is your (Name of dish). Place on the table in front of the guest with the main item of the dish nearest & facing towards the guest

Place the plate down gently

Leaving the table

Before leaving the table say “ Please enjoy your meal

Note:

Serve the children first. Then Ladies & then the gentlemen.( move clockwise around the table)Hold the second serving with your left hand & the first serving with your right hand. Other staff should assist if there are more than 2guests.
