


HOW TO WIPE AND CLEAN THE TABLE?
OBJECTIVE
To ensure that all F&B team know the standards.
POLICY
To maximize guests satisfaction
It is the policy of the hotel that all F&B team follow the same standard.
PROCEDURE
Select cloth
Clean cloth
Odorless
Clean cloth free from crumbs
Must be only be damp, not too wet
Select side plate
Plate is clean
Not chipped
Free from crumbs
No stains
Preparation
Place folded waiter cloth
on side plate
Carry side plate with left hand and approach table
Wipe table
Clear wrappers, particles and crumbs onto side plate with waiter cloth
Wipe out any stubborn stains on the table.
Turn the table cloth to the other clean side
Wipe table again thoroughly to clean any water mark
Wipe the edges and below of table.
Place back waiter cloth on the side plate
Rearrange table
Put back table top items in original position
Eg: Salt and pepper shaker
Leave table
Waiter’s cloth to be placed on side plate to prevent crumbs from spilling
Wash waiter’s cloth before placing back to service station
Wipe table
Clear wrappers, particles and crumbs onto side plate with waiter cloth
Wipe out any stubborn stains on the table
